Rachel's Open Door Maple Dijon Chicken

INGREDIENTS


  • 2 lb bone-in, skin-on chicken thighs

  • 1/2 cup Dijon mustard

  • 1/4 cup maple syrup

  • 1 tbsp rice vinegar

  • 3 tbsp fresh rosemary

INSTRUCTIONS


  1. Preheat the oven to 450°F.

  2. Mix together the sauce.

  3. Arrange the chicken in a baking dish, and sprinkle with salt and pepper.

  4. Pour the sauce over the chicken, turning to coat, and top with rosemary.

  5. Bake, uncovered, 40-50 minutes, until the internal temperature of the chicken is at least 165°F.

NOTE:

Serve with brown rice and steamed broccoli.
