Rachel's Open Door Maple Dijon Chicken
INGREDIENTS
2 lb bone-in, skin-on chicken thighs
1/2 cup Dijon mustard
1/4 cup maple syrup
1 tbsp rice vinegar
3 tbsp fresh rosemary
INSTRUCTIONS
Preheat the oven to 450°F.
Mix together the sauce.
Arrange the chicken in a baking dish, and sprinkle with salt and pepper.
Pour the sauce over the chicken, turning to coat, and top with rosemary.
Bake, uncovered, 40-50 minutes, until the internal temperature of the chicken is at least 165°F.
NOTE:
Serve with brown rice and steamed broccoli.
